Very old and low yielding Tempranillo vines, aged in all new French oak for 18 months.
Dark red cherry colour with purple hue, refined elegant nose of ripe berry fruit with spicy complexity. Bold but smooth with fruit preserves and toasty oak notes. Concentrated and rich with superb length.
The wine is produced in very limited quantity from the estate's oldest vineyards (80 years old vines) and is fermented in 2,000-liter open-top fermentation vats. Pigeage three times daily during fermentation to ensure optimal extraction, malo completed in French oak with further aging in barrel.
The name of the wine is the surname of the San Ildefonso family, father Roberto and daughter Paloma, and represents the apex of their winemaking tradition.

Finca Sobreno is a family run vineyard and winery in the Toro region - named for the ‘Tinta de Toro’ clone of Tempranillo. Sobreno owns 80 hectares of vineyards over half of which are over 35 years old, and a quarter qualify for organic certification and dedicated to traditional winegrowing methods and sustainability.
