Famiglia Di Tommaso 'Polibio' Montepulciano d'Abruzzo Riserva DOC

Grown on classic Abruzzian pergolas, on slopes with a southern exposure with ideal calcareous clay soils. Initially a green-harvest in August that reduces the yield by 40%, then hand harvested at the end of October. The grapes are placed in boxes half filled, then are transferred to a cold room, where they rest for 48 hours at a temperature of 4°C. Subsequently the grapes are pressed during night time, as the darkness and the cold helps preserve the must better and avoids the use of sulphites. The crushed grapes are placed in an insulated steel tank at 4°C. After 15 days at this temperature, the crushed grapes are heated quickly up to 13°C, allowing the natural yeasts to wake up and simmer. The cap remains raised for about 50 days, then slowly sinks into the liquid. When the skins become thin and fragile, and they’ve finished all their extract, the wine is pressed and racked-off into
wooden vats as a first decantation of the herbaceous parts.
In spring, it is transferred to French oak barrels, where the wine stays until mid-December of the following year: the level of the wine is decided on the basis of the grain of the wood, in order to allow the perfect aging to every single batch. A tasting panel tests every two months until May, and eventually every month from May to November. The rule is that there is no rule, each barrique is different and must be observed in its singularity. The goal is to create the perfect cuveè so we are randomly preparing the trials in black bottles and then we blind taste. The barriques that make up the winning cuveè are then combined before Christmas
in a steel vat which remains exposed to the cold at night. At the end of January the wine is conveniently filtered and bottled during a particularly cold night.
Very intense ruby red color, dense and impenetrable. On the nose there are fruity scents of morello cherry, licorice and vanilla lifted by frangipani and raspberry. On the palate it is warm, soft, mouth-filling with excellent complexity and persistence and fine ripe tannins.
