Bolla Soave Classico DOC
85% Garganega and 15% Trebbiano di Soave. The latter grape is known elsewhere in Italy as Verdicchio, and is NOT Trebbiano toscano/Ugni Blanc. Grapes are sourced from volcanic soils with basalt formations, on steep slopes furrowed by ancient dry stone terracing. Grapes are sent for soft crushing with short cold maceration, followed by alcoholic fermentation in stainless steel vats at 15 °C. When alcoholic fermentation is finished, the wine is left at low temperature on the fine lees until ready for blending. Bottling is in late winter.
The story of Bolla wines began simply with Abele Bolla and his family in the small town of Soave. The Bolla family lived in the Veneto region where they ran a small family inn. Wishing to offer his guests a superior experience, Abele made a decision that would launch his family’s business into the international spotlight. He decided to make and serve his own wine, and since 1883 they have been making traditional wines ever since.
