This is one of Spain’s youngest DOPs, established in 2003. It is located in the province of Cuenca within the Castile-La-Mancha. \u003cspan style=\"mso-spacerun: yes;\"\u003e \u003c\/span\u003eIt is made up of just 9 producers, including Bodegas Illana. There are 17 different varieties here, Tempranillo and Bobal being the major grapes, grown mostly on deep limestone\/clay soils mixed with silt, topped with small pebbles. Illana is a 4\u003csup\u003eth\u003c\/sup\u003e generation winery, growing 100 hectares of organic vines.\u003c\/p\u003e\n\u003cp class=\"MsoNormal\"\u003eIllana 4 months: Blend of Bobal, Tempranillo and Syrah. Picked overnight, pre-fermentation maceration at low temperature, separate temperature controlled ferments.
